HOLIDAY WINE
CHICKEN STEW

  • 1 LB. SKINLESS, BONELESS CHICKEN, CUT INTO BITE-SIZED CHUNKS
  • 1 MEDIUM ONION, CHOPPED OR SLICED
  • 2 PEELED POTATOES CUT INTO 1-INCH CHUNKS
  • 1 CUP HALVED BABY CARROTS
  • 1 SMALL BOX OF FROZEN BABY LIMA BEANS
  • 14-½ OZ. CAN CRUSHED OR DICED TOMATOES
  • 1 CUP CANNED COCONUT MILK
  • 1 CUP CHICKEN BROTH
  • ¾ CUP HOLIDAY WINE
  • OPTIONAL: CURRY POWDER OR HOT SAUCE
  • PARSLEY FOR GARNISH

Put all ingredients in a large microwave-safe bowl and mix thoroughly. Cover tightly and microwave on high for 50 minutes or until potatoes are soft. Uncover carefully – hot steam will escape! Enjoy. Serves 6.
