COCONUT
RICE PUDDING

  • 1 cup sushi or arborio rice
  • 1 tbs vanilla or beans from one vanilla pod
  • 1 can coconut milk (13.5 fl oz)
  • 3 cups water
  • 1 tbs salt
  • ¾ cup firmly packed brown sugar
  • 1” piece of lemongrass

Place all of the above ingredients in a rice cooker, stir to mix and cook until thick. Serve with chopped mango or pineapple.
